The normal behavior of entrée is to record every single item that a customer purchases. This modification makes an exception for items which are sold as a substitute for an out-of-stock item. When such a substitution is made the system does not record the substitute item in the customer's sales history. This, in turn, prevents the substitute items from appearing on the customer's Standard Order list as a "regular" item.
